The lead stage is one of the most important pieces of the lead data model. It is incredibly useful when trying to get a grasp on how a lead is doing.
A lead stage can also be an incredibly useful data tool when it comes to reporting on a high level how the early stages of the sales pipeline are.
Side tangent: filtering down by stage is a great way to see on a report how your sales reps are doing and if they are bringing in a good amount of quality leads. Or if the leads are just falling to the wayside and might not be that great.
In the sales process, leads are the begging of the individual entering the sales path.
It fills the space between marketing efforts and the full-blown deal crunch/negotiation.

Step by Step
The first thing you will need to do is get to the setup of salesforce.
To do this go to the top right corner of your org and click setup.
From there go to the object manager.
This will bring up a list of the objects in the current salesforce org.
Click fields and relationships.
This will take you to a list of the current fields on the selected object.
Find and click on lead status.
From there scroll down until you find the ‘lead status picklist values’ and click the new button .
From there you will need to enter in the metadata including the label, API name, converted status, if it is the default, and the chart color.
Once completed click save.
This will bring you back to see the lead status values. Make sure this new status is activated and click reorder to put it in the right spot for your lead process.
Once completed go to the front end and double-check that it has been added to your lead status bar, this might take up to 30 minutes to update depending on the size of your Salesforce org.
